Simmered daikon

Simmered daikon topped with shaved bonito flakes
  • Daikon
  • Water *enough to cover Daikon in pan
  • 1/4 teaspoon Dashi added to the water Powder (if using fresh made dasi substitute for the water & dashi powder)
  • 1/2-1 tablespoon Sugar
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Mirin
  • 1 tablespoon Sake


Instructions
Slice Daikon about 1/2 inch thickness. Remove skin and cut them in half if large.

Place Daikon in a saucepan, add water just enough to cover and add Dashi Powder. You can use your home-made dashi stock for this.

Add seasoning ingredients and bring to the boil.

Reduce the heat to low, cover with lid and simmer for 20 to 30 minutes. If you have a drop lid use that or a smal bowl or plate to keep them submerged

When Daikon pieces are tender turn off heat and let cool down. Serve warm or at room temp.
