1 lb thin sliced meat
2 tablespoons sugar
4 tablespoons soy sauce
3 tablespoons sake
3 tablespoons mirin
2.5 cups Dashi stock
Peel daikon and cut into 1/4 inch thick rounds, then into quarters.
Place daikon in pan and cover with water. Bring to a boil and simmer for about 15 minutes or until fork tender with just a slight crunch (don’t over cook). Drain and set aside.
Next add a tablespoon of oil to a large frying pan and cook the beef. Making sure to stir in sugar while beef is still a little red.Continue and stir in the soy sauce, mirin, and sake.
Lastly, add the dashi stock and daikon. Simmer, stirring occasionally, for 15-20 minutes.
For best flavor, let sit for 30 minutes or so and reheat before serving. Garnish with green onion. Serve with rice.
